Zesty Turkey Italian Meatloaf

Whip It Up Wednesday!

I love me some good meatloaf, there is something insanely comforting about meat in the shape of a loaf of bread. I can’t explain it but it is a real deal thing. Serve it up with Mashed Potatoes and you’ve got yourself a home run hit for pure comfort food. But I am rearranging my life and I’m eating clean and carbs have been benched till I reach my goal. So I had to come up with a clean version of my favorite meatloaf to scratch the itch. And as far as mashed potatoes go, I swapped them out for delicious steamed veggies. Not the same but my waist line will like it better!

Zesty Italian Turkey Meatloaf

1 lb Lean Ground Turkey
1 Italian Turkey Hot Link Casing Removed
1/2 Green Pepper chopped
1/2 Onion Chopped
1/4 Fresh Basil Chopped
1/2 C Tomato Basil Spaghetti Sauce
1/2 C Part Skim Mozzarella
1 TBS Italian Seasoning
1 TBS Dried Parsley

Saute Onion and Peppers in a bit of olive oil until soft and translucent (3-5 minutes) Add and mix all other ingredients and shape and put in loaf pan. Bake @ 350 degrees for 45 minutes — Top with More Spaghetti Sauce and Freshly grated Parmesan cheese — So flipping good you won’t even think you’re eating healthy!!! Enjoy! 🙂
